Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 teaspoon grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 400g can chopped tomatoes
  • 400g can chickpeas, drained and rinsed
  • 200ml coconut milk
  • 2 handfuls fresh spinach
  • Juice of half a lime
  • Salt and pepper to taste
  • Fresh coriander, to serve

Method

  1. Warm the oil in a large pan over medium heat. Add the onion and cook until golden.
  2. Stir in the garlic and ginger, then add the cumin, turmeric and garam masala. Cook for one minute to release the flavours.
  3. Add the tomatoes and chickpeas, followed by the coconut milk. Simmer gently for about 15 minutes until the sauce thickens.
  4. Stir through the spinach until it wilts. Add lime juice and season with salt and pepper.
  5. Serve with steamed rice or warm flatbread and top with fresh coriander.
