World Health Day : 5 Secret Superfoods

Not only does improving our diet nourish our body, it also makes us feel less tired, improves our mood and brightens our skin too. Eating healthy doesn’t have to be boring or lacking flavour; healthy food can create some of the most popular dishes in the UK.

Here is a list of the top five ‘superfoods’ and how you can incorporate them into an enjoyable and tasty meal:

  1. Blueberries: packed with antioxidants, this berry can be enjoyed as part of a breakfast granola bowl or a blended smoothie mixed with other berries.
  • Kale: Full of vitamin C and K, this leafy green can be mixed in as part of a salad at lunchtime.
  • Salmon: This rich source of omega 3s is often used with noodles as salmon teriyaki, grilled with vegetables or smoked and eaten with poached eggs on sourdough bread, topped with hollandaise sauce.
  • Avocado: The king of healthy fats, avocado is often spread in bagels or on toast and can be enjoyed alone or with cream cheese or salmon. Another great addition to sprinkle on avocado is chia seeds, a fantastic source of fibre.
  • Broccoli: As well as being packed full of vitamins, broccoli is also a great vegetable because it can be enjoyed with so many different meals, for example steak, chicken and even in soup.  

Eating healthy isn’t about consuming foods you don’t even like just because they’re good for you; eating healthy is about finding what you really enjoy and creating fun, flavour filled dishes that both nourish the body and fill you with joy.

Hot, full of flavour and a creamy texture. It may not appear to be the most appetising meal, but broccoli soup is actually a very popular dish- why not give it a try?

Ingredients:

  • 2 tbsp rapeseed oil
  • onion finely chopped
  • 1 stick celery sliced
  • leek sliced
  • 1 medium potato diced
  • 1 knob butter
  • 1l low salt or homemade chicken or vegetable stock
  • 1 head broccoli roughly chopped
  • 140g stilton or other blue cheese, crumbled

Method

Step 1: Heat 2 tbsp rapeseed oil in a large saucepan and then add 1 finely chopped onion. Cook on a medium heat until soft. Add a splash of water if the onion starts to catch.

Step 2: Add 1 sliced celery stick, 1 sliced leek, 1 diced medium potato and a knob of butter. Stir until melted, then cover with a lid. Allow to sweat for 5 minutes then remove the lid.

Step 3: Pour in 1l of chicken or vegetable stock and add any chunky bits of stalk from 1 head of broccoli. Cook for 10-15 minutes until all the vegetables are soft.

Step 4: Add the rest of the roughly chopped broccoli and cook for a further 5 minutes.

Step 5: Carefully transfer to a blender and blitz until smooth.

Step 6: Stir in 140g crumbled stilton, allowing a few lumps to remain. Season with black pepper and serve.
