3 large eggs

30ml milk

1 tablespoon olive oil

50g feta cheese, crumbled

In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Heat the olive oil in a non-stick skillet over medium heat.

For a quick and easy starter to begin your meal, why not try a delicious prawn cocktail salad:


250g cooked peeled prawns

2 tablespoons mayonnaise

2 tablespoons ketchup

1 teaspoon Worcestershire sauce

1 teaspoon lemon juice

Salt and pepper to taste

Mixed salad leaves, to serve

Lemon wedges, to garnish

Paprika, for sprinkling


In a bowl, mix the mayonnaise, ketchup, Worcestershire sauce, lemon juice, salt, and pepper to create the cocktail sauce.

Add the cooked peeled prawns to the cocktail sauce and gently toss until they are well coated.

Arrange a bed of mixed salad leaves on serving plates or in cocktail glasses.

Spoon the prawn cocktail mixture over the salad leaves.

1 red bell pepper, diced

1 yellow bell pepper, diced

250g Spanish paella rice

750ml chicken or vegetable broth

250g prawns

150g chicken breast

Salt and pepper to taste

Heat the olive oil in a large paella pan or skillet over medium heat. Add the chopped onion and cook until softened, about 2-3 minutes.

Add the minced garlic, diced bell peppers, and diced tomato to the pan. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.

Stir in the smoked paprika, dried thyme, and dried oregano. Cook for another minute to release the flavours.

Add the paella rice to the pan, stirring well to coat it with the oil and spices.

Pour in the chicken or vegetable broth and bring to a simmer. Cook for about 10-15 minutes, stirring occasionally, until the rice has absorbed most of the liquid and is almost cooked through.

Arrange the prawn and diced chicken evenly over the rice in the pan. Season with salt and pepper to taste.

Cover the paella pan with a lid or aluminium foil and continue to cook for another 10-15 minutes, or until the seafood is cooked through, the chicken is cooked, and the rice is tender.

Once cooked, remove the paella from the heat and let it rest for a few minutes before serving.

200g digestive biscuits, crushed into crumbs

60g unsalted butter, melted

For the filling:

500g cream cheese, softened

120g powdered sugar

Prepare the base: In a mixing bowl, combine digestive biscuit crumbs with the melted butter until the mixture resembles wet sand.

Press the base mixture into the bottom of a 9-inch pan, using the back of a spoon or the bottom of a glass to pack it down firmly. Place the pan in the refrigerator to chill while you prepare the filling.

In a large mixing bowl, beat the softened cream cheese until smooth and creamy.

Add the powdered sugar, lemon zest, lemon juice, and vanilla extract to the cream cheese. Beat until well combined and smooth.

In a separate mixing bowl, whip the chilled heavy cream until stiff peaks form.

Gently fold the whipped cream into the cream cheese mixture until well combined and no streaks remain.

Remove the prepared base from the refrigerator and spread the cheesecake filling evenly over the base, smoothing the top with a spatula.

Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to set.

Before serving, garnish the cheesecake with whipped cream and lemon slices or zest if desired.
