Ingredients

225g pasta of your choice

4 cloves garlic, minced

225g mushrooms, sliced

2 tablespoons olive oil

4 tablespoons unsalted butter

1 cup double cream

1/2 cup grated Parmesan cheese, plus extra for serving

Salt and black pepper to taste

Fresh parsley, chopped, for garnish

Instructions

Cook the pasta according to the package instructions in a large pot of salted boiling water. Keep ½ a cup of the pasta water and drain the rest.

In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute.

Add the sliced mushrooms to the pan and cook, stirring occasionally, until they are tender, about 5-7 minutes.

Reduce the heat to medium-low and add the butter to the pan. Once the butter has melted, pour in the double cream and stir to combine.

Sprinkle in the grated Parmesan and stir until the cheese has melted and the sauce is smooth. If the sauce is too thick, thin it out by adding some of the pasta water.

Season the sauce with salt and pepper.

Add the cooked pasta to the pan and toss to coat it evenly in the creamy garlic mushroom sauce.

Serve your pasts hot, garnished with fresh parsley and extra cheese.

450g pizza dough, homemade or store-bought

4 tablespoons unsalted butter

4 cloves garlic, minced

1/4 cup all-purpose flour

1 cup whole milk

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped, for garnish (optional)

Instructions

Preheat your oven to 230°C. If using a pizza stone, place it in the oven to preheat.

Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer the rolled-out dough to a pizza pan or a piece of parchment paper.

In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute.

Sprinkle the flour over the melted butter and garlic, stirring constantly to form a roux. Cook the roux for 1-2 minutes.

Gradually pour the milk into the saucepan, whisking constantly to prevent lumps from forming. Continue to cook the sauce, stirring frequently, until it thickens and reaches a smooth consistency.

Season the white sauce with salt and black pepper to taste.

Spread the white sauce evenly over the pizza dough, leaving a small border around the edges.

Sprinkle the shredded mozzarella and parmesan cheese over the white sauce.

Bake the pizza in the preheated oven for 12-15 minutes.

Remove the pizza from the oven and let it cool slightly. Sprinkle chopped fresh parsley over the top for garnish.

Slice the garlic pizza into wedges and serve hot.

If you’re looking for a slightly lighter option, this Garlic Butter Prawn Stir Fry is a delicious midweek meal.

Ingredients

450g large prawns, peeled

450g asparagus spears

4 cloves garlic, minced

4 tablespoons unsalted butter

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon cornstarch

Salt and black pepper to taste

Cooked rice or noodles, for serving

Sesame seeds and chopped green onions for garnish

Instructions

In a small bowl, whisk together the soy sauce, honey, and cornstarch until well combined.

Heat the olive oil and 2 tablespoons of butter in a wok over medium-high heat.

Add the minced garlic to the wok and sauté for about 30 seconds until fragrant.

Add the prawns to the wok and cook for 2-3 minutes on each side until pink and opaque. Remove the prawns from the wok and set aside.

In the same wok, add the remaining 2 tablespoons of butter. Add the asparagus pieces and stir-fry for 3-4 minutes until they are tender.

Return the cooked prawns to the wok. Pour the soy sauce mixture over the shrimp and asparagus. Stir-fry for another 1-2 minutes until the sauce thickens slightly.

Season with salt and black pepper to taste.
