Keep Calm & Cook: Banana & Pecan Loaf

There is always that one truly timeless cake that people of all ages enjoy, and this is what we think Banana Loaf is! This classic and trustworthy cake that never disappoints is this week’s Keep Calm and Cook recipe. As fun as baking can be, sometimes an easy and mess-free cake is just what you need!

Ingredients:

-3 ripe bananas

-250 self-raising flour

-100g light brown sugar

-3 eggs

-125ml vegetable oil (or coconut oil)

-1 teaspoon baking powder

-1/2 teaspoon nutmeg

-1/2 cinnamon

-50g pecans (chopped)

Instructions:

-In a large bowl, mash the peeled bananas with a fork or a potato masher.

-Add the sugar, eggs and oil and mix well with a whisk.

-Add the flour, baking powder, cinnamon, nutmeg and pecans and whisk until all ingredients have been incorporated in the mix evenly.

-Pour the mix into a loaf tin lined with baking paper and lightly oiled.

-Preheat oven to 185°C and bake for 35-45min, until the cake has risen nicely.

-Use a knife to check the inside of the cake is baked well (the knife should come out clean).

Leave the cake to cool down before serving and enjoy! We love how well bananas and pecans go together, but you can switch out the pecans for your favourite sweet additions like dark chocolate chips, dried fruits or even some blueberries!
