Keep Calm and Cook: Vegan Burrito Bowl

With Veganuary having officially started, a record breaking 500,000 people have signed up to take part this year. If you are one of them, you might be looking for new recipes to prepare this month. In this Keep Calm and Cook “Vegan Edition”, we are sharing a delicious and filling burrito bowl recipe, that includes fresh and tangy homemade salsa and rich guacamole. Whether you are a long-time vegan, trying out the diet for the first time or simply curious, this recipe is easy-peasy lime-squeezy!

Ingredients:

-Canned black beans (undrained)

-Large vine ripe tomatoes

-White onion

-Red onion

-Avocados

-Iceberg lettuce

-Fresh coriander (for both salsa and beans)

-Tofu

-Rice (type of your choice)

-Lime juice

-Cumin

-Paprika

-Cayenne pepper

-Chili flakes

-Chili powder (mild)

-Olive oil

-Salt & pepper

Instructions:

For the salsa:

-Chop large tomatoes and red onion into a small dice

-Chop fresh coriander

-In a bowl, mix the diced tomatoes, onion, fresh coriander, lime juice and chili flakes. Then add salt and pepper to taste.

-Set aside and refrigerate

For the guacamole:

-Crush ripe avocado in a bowl and add lime juice.

-Add mild chili powder, salt and pepper to taste.

-For a more traditional guacamole, you can also add small chunks of tomato.

-Set aside and refrigerate

For the “Cantina-style” beans:

-Heat olive oil in a saucepan, add the chopped white onion and garlic and cook on medium heat until onion softens.

-Add the black beans with the undrained liquid, season with cumin, cayenne pepper, salt and pepper and add the chopped coriander. Simmer for 5-7min.

For the seasoned tofu:

-In a hot pan, cook diced tofu in olive oil.

-Season with paprika, mild chili powder, and salt and pepper to taste.

-Reduce to medium heat, stir regularly and cook for 5-8min until tofu is golden.

Prepare your rice, chop up some iceberg lettuce, add a portion of everything together in bowl and serve.

There is no right or wrong order for the presentation of the bowl, but we suggest adding the rice, beans and tofu first, then the lettuce, salsa and finally the guacamole. This bowl is perfect for dinner and also makes an ideal dish for meal-prepping! It is full of fresh and nutritious ingredients and will keep you full for hours. Top tip: the salsa tastes even better the next day after a night in the fridge!
