Hats off to our Inspirational ScotHot Chefs!

Alongside fabulous food, our people are the key ingredient in our recipe for success. Throughout our journey, we are fortunate to employ over 200 stars in Inspire who shine for us every day. This month, we are delighted to have seen two of our Inspire Chefs win awards for their talents!

Tony Bukhsh – Head Chef

NCR Dundee

We are thrilled to announce that our Head Chef Tony Bukhsh has won a Bronze Medal at the Brakes Scottish Chef of the Year Competition held at ScotHot last week! Tony was up against some of the top chefs in Scotland and has done both himself and Inspire proud by winning this prestigious accolade! Not only that, Tony also won the Holchem Hygiene Award for the competition too!

Tony has been working with the support of Inspire Head Chefs David Hunt and Willie Pike over the last few months, with all 3 chefs giving lots of their personal time to develop and practice Tony’s dishes. He was also supported by Christopher “Mackers” MacGregor (Chef at Kilgraston School) who helped out as Commis Chef for Tony on the day.

Tony’s winning menu was:

Amuse Bouche
Pan Roast Scallop, Flavours of Cullen Skink and Smoke

First Course
Confit Sustainable Salmon, Crispy Langoustine Puffed Ebly Salad, Chilli and Root Ginger Dressing

Main Course
Loin of Perthshire Venison with Haunch Hot Pot, Celeriac Puree, Spiced Beetroot Slaw, Stornaway Black Pudding Mousse, Roasted Vegetables with a Port Wine Jus

Dessert
Coconut and Mango Delice, Exotic Fruit Salsa with Lime Syrup and Passion Fruit Souffle

 

 

Daniel Avis – Commis Chef
Aker Solutions, Aberdeen

We are also proud to announce that Daniel Avis from Aker Solutions achieved a Certificate of Merit following his entry into the Healthy Living Challenge at ScotHot. Dan had to make a live main course in front of a packed house for 4 people in 40 minutes, no mean feat!

Daniel prepared a Classic Tuna Niçoise with a Twist!
