Spicy Miso Ramen

Ingredients

4 cups chicken broth

2 cups water

2 packs of ramen noodles

2 tablespoons miso paste

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sriracha sauce

2 green onions, thinly sliced

1 cup sliced mushrooms

1 cup baby spinach leaves

2 eggs

Salt and pepper to taste

Instructions

In a large pot, combine the chicken broth, water, miso paste, soy sauce, sesame oil, rice vinegar, garlic, ginger, and sriracha sauce. Bring to a simmer over medium heat.

Add the sliced mushrooms to the pot and let them cook for about 5 minutes until they begin to soften.

While the broth is simmering, bring another pot of water to a boil. Carefully add the eggs to the boiling water and cook them for about 6-7 minutes for soft-boiled eggs or 9-10 minutes for hard-boiled eggs. Transfer the eggs to a bowl of ice water to stop the cooking process. Once cooled, peel the eggs and slice them in half lengthwise.

Cook the ramen noodles in the broth according to the package instructions until they are tender.

Once the noodles are cooked, add the baby spinach leaves to the pot and let them wilt for a minute. Season the broth with salt and pepper to taste.

To serve, divide the cooked ramen noodles and broth among serving bowls. Top each bowl with a halved boiled egg and sliced green onions.

Garnish with any additional toppings of your choice, such as sliced chili peppers, nori sheets, corn kernels, bamboo shoots, or sesame seeds.

Pumpkin Ramen with Coconut Milk

Ingredients

4 cups vegetable broth

2 cups water

2 packs of ramen noodles

1 small pumpkin , peeled, seeded, and diced

1 can coconut milk

2 tablespoons soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon red curry paste

2 green onions, thinly sliced

1 cup sliced shiitake mushrooms

1 cup baby spinach leaves

Salt and pepper to taste

Instructions

In a large pot, combine the vegetable broth, water, diced pumpkin, coconut milk, soy sauce, sesame oil, garlic, ginger, and red curry paste. Bring to a simmer over medium heat.

Let the pumpkin simmer for about 15-20 minutes, or until it is tender and easily pierced with a fork.

While the broth is simmering, bring another pot of water to a boil. Cook the ramen noodles according to the package instructions until they are tender. Drain and set aside.

Once the pumpkin is cooked, use an immersion blender or transfer the soup to a blender and blend until smooth and creamy.

Return the blended soup to the pot. Add the sliced mushrooms and baby spinach leaves to the pot and let them cook for a few minutes until the mushrooms are tender and the spinach has wilted.

Season the soup with salt and pepper to taste.

To serve, divide the cooked ramen noodles among serving bowls. Ladle the pumpkin soup over the noodles.
