Mini Quiches

The perfect picnic accompaniments!

Ingredients:

  • 1 sheet of puff pastry dough (375g)
  • 4 eggs
  • 120ml of milk
  • 60g of grated cheese (cheddar, mozzarella, or your favourite)
  • 60g of diced ham or cooked bacon
  • 30g of chopped spinach (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the puff pastry dough on a floured surface.
  3. Cut the dough into 12 equal squares.
  4. Press each square into the cups of a muffin tin.
  5. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  6. Add the shredded cheese, diced ham or cooked bacon, and chopped spinach (if using) to the egg mixture and stir to combine.
  7. Pour the egg mixture into each muffin cup, filling each about 2/3 full.
  8. Bake for 20-25 minutes, or until the quiches are puffed and golden brown.
  9. Remove from the oven and allow to cool for a few minutes before serving.
  10. Use a knife to loosen the edges of the quiches and remove them from the muffin tin.
  11. Serve warm and enjoy!

  • 400g stale sourdough, torn into bite-sized pieces
  • 500g cherry tomatoes, halved
  • Sea salt and freshly ground black pepper, to taste
  • 2 tablespoons capers, drained
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 small red pepper, diced
  • 1 small cucumber, diced
  • 1/2 cup fresh basil leaves, torn
  • 50g parmesan cheese, shaved

For the Dressing:

  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Sea salt and freshly ground black pepper, to taste

Instructions:

  1. Preheat the oven to 180°C.
  2. In a large bowl, combine the torn sourdough, cherry tomatoes, sea salt, black pepper, capers, red onion, garlic, and red pepper.
  3. Drizzle with olive oil and toss to coat.
  4. Spread the mixture out in a single layer on a baking sheet and bake for 15-20 minutes, or until the bread is golden brown and the tomatoes are slightly caramelized.
  5. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, sea salt, and black pepper to make the dressing.

  • In a large frying pan, heat 1 tablespoon of sunflower oil over medium heat. Add the prawns and sprinkle them with cajun seasoning and chilli flakes. Cook for 2-3 minutes on each side or until they are pink and cooked through.
  • In a bowl, mix the diced avocado, jalapenos, red onion, mango, coriander, and red chilli. Season with salt and pepper to taste.
  • To assemble the tostadas, place a spoonful of the mango salsa on each tortilla. Top with the cooked prawns.

Add another colour pop to your picnic! these skewers are made with fresh strawberries, tangerines, mango, kiwi, and red grapes, and are served with a creamy and flavourful dip made with Greek yoghurt, cream cheese, vanilla extract, sprinkles, and strawberry dessert syrup.

Ingredients:

For the Fruit Skewers:

  • 10-12 strawberries
  • 4 tangerines peeled and segmented.
  • 1 mango, peeled and cut into chunks.
  • 2 kiwis, peeled and cut into chunks.
  • 225g red grapes

For the Birthday Cake Dip:

  • 240ml Greek yoghurt
  • 113g cream cheese, softened.
  • 1 tsp vanilla extract
  • 2 tbsp sprinkles
  • 2 tbsp strawberry dessert syrup

Instructions:

  1. Prepare the fruit by washing and cutting them into bite-sized pieces.
  2. Thread the fruit onto skewers in any order you like.
  3. In a bowl, mix the Greek yoghurt, cream cheese, vanilla extract, and strawberry dessert syrup until smooth and creamy.
  4. Add the sprinkles to the bowl and stir to combine.
  5. Serve the fruit skewers with the birthday cake yoghurt dip on the side.
